How To Make Groundnut Soup

Ingredients for groundnut soup

Here is what you’ll need for the soup:
  • Raw groundnuts – 500g
  • Assorted meat – 500g
  • Dry fish
  • Stock fish
  • Palm oil – 2tbsp
  • Pumpkin leaves – 1 handful
  • Ground crayfish – 2tbsp
  • Stock cubes – 2
  • Salt and pepper – to taste

PREPARATION METHOD FOR gROUNDNUT SOUP

Here are listed the steps on how to cook and make your Peanut soup or groundnut soup:
  1. First of all, prepare your groundnuts. Remove the shells and peel them. Put raw groundnuts into a dry pan and roast, stirring constantly, until they turn golden brown. Let the groundnuts cool and grind them into a paste using a mill or a blender.
  2. Soak the dry fish and stock fish in clear water until it becomes soft and tender. If your fish is very tough, you may even need to boil it for a couple of minutes. Once the fish is soft, remove the bones and chop it.
  3. Finely chop the pumpkin leaves or defrost and chop the spinach leaves.
  4. Start cooking your meat. Most cooks prefer to use shaki and beef. If you’re using shaki, put it into the pot first and boil it until it’s nearly done. Then add the fish, beef, and stock cubes and cook until there is no tough piece of meat left in the pot.
  5. Season with salt and pepper, add the crayfish, and bring the mixture to a boil. Take off the heat.
  6. Remove the meat and fish from the pot, leaving only the stock.
  7. Put the stock back on the stove, add the groundnut paste, stir well, and cook on low heat, stirring constantly. Make sure the mixture doesn’t burn: add more water if needed and watch it closely.
  8. After about 15 minutes of cooking, you will notice a thin film of oil forming on the surface of the soup. At this point add the meat and fish back to the pot, stir, and bring to a boil on low heat.
  9. Add the pumpkin leaves or spinach leaves, stir, bring to a boil again and take off the heat.
  10. Serve groundnut soup on its own or together with your favourite fufu meal
